White chocolate truffle pie

ingrediënten (voor 12 personen):
  • For the dough
  • 2 eggs
  • 4 tbsp brown sugar
  • 5,5 tbsp flour
  • 50 gr white chocolate
  • For the truffle layer
  • 3 dl whipped cream
  • 350 gr white chocolate
  • 250 gr cream cheese
  • For garnishing
  • dark, white or milk chocolate
  • cocoa powder

  1. Grease the spring cake tin (20cm). Cover the bottom with baking paper.
  2. Batter the eggs and sugar for 10 minutes until an airy mixture that runs slowly off the mixer.
  3. Sieve the flour and mix with the eggs. Add the melted chocolate.
  4. Put the dough into the tin.
  5. Bake the cake for about 25 minutes in an oven preheated on 180 C, until spongy.
  6. Let the cake rest in the tin.
  7. Leave it to cool on a pie grill.
  8. Put the cooled cake back into the tin.
  9. For the truffle layer, bring the whipped cream to boil while stirring.
  10. Let it cool a little and add the white chocolate.
  11. Stir until smooth.
  12. Take the pan off the fire.
  13. Let it cool while stirring.
  14. Add the cream cheese.
  15. Pour the mixture on the cake and leave it to stiffen in the fridge, for two hours.
  16. Remove the spring cake tin and put the pie on a pie plate.
  17. Garnish the pie with chocolate curls and cocoa powder.
tip: You might be thinking, how do I make chocolate curls? Easy. You can use a thinpeeler to shave curls off a chocolate bar. Or, you melt the chocolate, spread this on a board (not wooden!) and shave with a knife. Good luck!!
