Spicy egg plant

ingrediënten (voor 4 personen):
  • 2 egg plants
  • 1 tbsp salt
  • chilli powder
  • sunflower oil
  • 1 tbsp ricewine
  • 1 dl water
  • 1 tbsp sambal
  • 1 clove of garlic
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • salt, pepper
  • roasted sesame seeds

  1. Cut the egg plant into large pieces. Put them in a bowl and sprinkle with the salt. Leave this for 20 minutes.
  2. Mix the sambal, garlic, soy sauce and the rice vinegar.
  3. Rinse the egg plant well in a colander, and gently dry it with kitchen paper. Sprinkle with chilli powder.
  4. Heat oil in a stir-frying pan, and add the egg plant with the ricewine. Fry this until the egg plant becomes a little brown. Add the water and cover the stir-frying pan, leave this to simmer for 3 minutes. Add the sauce and fry briefly. Bring to taste with pepper and salt, and put it on a serving plate. Sprinkle with sesame seed and serve.
tip: Eat this as one of many dishes with rice.
