My Russian brother Ilya has made this for us in the Netherlands. It's a bit like ravioli.

ingrediënten (voor 4 personen):
  • 1 cup of starch
  • 250 ml milk or water
  • 1/2 tbsp salt
  • 1 tbsp vegetable oil
  • 3 eggs
  • 500 g minced meat
  • 1 onion
  • salt and pepper

  1. Chop up the onion, and mix it through the meat. Add some salt and pepper. To make the meat more juicy, you can add some milk. Put it away in the fridge.
  2. Mix the flour with the eggs and the milk, salt and the oil until smooth. Role out part of the dough until thin (1 - 2 mm).
  3. Take a glass or something round, and use it to cut circles out of the dough (about 5 cm diameter).
  4. Put a little meat on each dough circle, and fold it double. Squeeze the rims together.
  5. Boil a large pan with water, and drop the pilmeni carefully into the boiling water. Boil the pilmeni, while stirring once in a while, until done in about 20 minutes.
  6. Pilmeni are served with butter, sour cream or vinegar.
