Deepfried envelopes. A bit like spring rolls, but a little different. The peanuts give it a nice twist.

ingrediënten (voor 2 personen):
  • 3 cups of wheat starch
  • 2 tbsp melted butter
  • 1 cup of lime juice
  • 1 cup of water
  • 2 tbsp vegetable oil
  • round shape of about 5 cm in diameter
  • 1 cup of minced pork
  • 1 cup of ground roasted peanuts
  • 2 coriander roots
  • 1 scallion
  • 1 clove of garlic
  • 1 tsp pepper
  • 1 cup of sugar
  • 2 tsp salt
  • 1 tbsp frying oil
  • deepfrying oil

  1. Chop up the coriander root and garlic. Grind the coriander root, garlic and pepper together.
  2. Chop up the scallion.
  3. Heat the oil in a stirfrying pan. Add the mixture of coriander root, garlic and pepper. Fry briefly and add the scallion. Fry briefly and add the minced meat. Fry until loose and done.
  4. Bring to taste with sugar and salt. Fry until dry. Leave to cool in a bowl, and mix with the peanuts.
  5. Sieve the starch in a bowl. Add the butter and mix well.
  6. Add 1 tsp of salt, the water, the lime juice and the vegetable oil. Knead until smooth. Put aside for about 20 minutes.
  7. Roll out the dough until thin. Use the round shape to cut out circles. Put a little filling on every circle and fold double. Fold the rims.
  8. Put the deepfrying oil in the pan (or use a deepfrying pan) and heat. Deepfry the envelopes until golden yellow. Leave them to leak on a kitchen napkin.
  9. Serve.
